Chocolate Chip Coconut Protein Balls
- 1/2 cup Truvani vanilla protein
- 2/3 cup of Justin’s peanut butter
- 1/4 cup of organic local honey
- 1/3 cup of vegan chocolate chips (I prefer dark chocolate chips, but you can use semi-sweet too)
- 1/3 cup of organic unsweetened shredded coconut (& then some more to roll them in)
- couple pinches of organic pink sea salt on top
Directions:
Mix Truvani protein powder, peanut butter, honey, chocolate chips, and coconut shreds together in a mixing bowl. Pour some shredded coconut on a plate. Scoop out a spoonful of the mixture, roll into about a 1.5 inch ball in the palm of your hand, and then roll in the shredded coconut. Repeat until all your mixture is gone. Place them on a plate and sprinkle with sea salt. Put them in the fridge and let chill for 30 minutes. Enjoy!
